Mafaldine are part of the family of long pasta, unique with their wavy edges. Curly pasta, such as Mafaldine, once cooked, has a unique consistency that differs from long, straight pasta.

Another special feature of this shape is the increased ability to retain sauce. It is a very versatile pasta recommended with ricotta ragù, game meat sauces, seafood or white sauces with soft cheeses.
