This sauce is part of the ULTRA collection. Ultra for ultra seasonal, ultra limited, produced only once a year! Umamido is the best spot to eat a good ramen in Brussels. They have been preparing eur kimchi themselves for almost 9 years with the same patience and the same method, and it is this process that is crazy: each new batch is started with a small part of the previous one, the fermentation is therefore alive from the start.

After weeks of testing, the recipe imposed itself: Kimchi, very ripe local pears, Habaneros from Brussels marinated for 6 months in organic alcohol vinegar, and artisanal white miso.

A subtle balance between the complexity of the fermentation, the sugar of the pears and the spiciness of the Habaneros, which highlights the intense flavor of the kimchi.

A wave of flavour, ready to hit every table.

The production has been limited to 800 vials.

Ps: All the sauces produced are made from peppers that grow in Brussels in aquaponics! They also grow less than 2km from where the sauces are produced!
