This rillette made with smoked fish is prepared on the island of Yeu in Vendée. They are made with Albacore white tuna from Vendée and Breton fishermen. On the palate, we find the authentic taste of cold-smoked tuna with beech wood combined with the cream which gives the rillettes an ultra-melting texture.
