The tortillas are made with nixtamalized blue corn flour like in Mexico.
It is a process of Mesoamerican origin by which corn is cooked in water and lime. Nixtamalization allows the B vitamin to be released from the corn kernel, making it available for use by the human body.
They also use a specific corn variety that gives this color and generally contain 20% more protein than those made from white or yellow corn.
These mini tortillas are ideal for making tostadas, tacos dorados or more.
