Authentic Provencal recipe based on aubergines and tomatoes from the South, selected, washed and trimmed before being cut into pieces. The tomatoes are seeded beforehand; onion and aromatics scorched in olive oil. The whole thing is then stewed.

Warm up this bohemian comtadine in a saucepan over low heat, and serve it with your roast meats.

Cold or slightly reheated, it will be your delight to start a summer meal or as a vegetable drizzled with a drizzle of olive oil.

And if you have leftovers, break 2 or 3 whole eggs into it, beat them, and make an omelette, with which you will prolong your treat even further.
